Taco Salad

Ingedients
SALAD: 4 cups chopped lettuce, 1 cup beans, Pulled pork or ground beef, 2 small chipped tomatoes, 1/2 cup fresh or canned corn, 2-3 finely chopped scallions, 1 cup crushed tortilla chips, Sharp cheddar or queso fresco, Extra tortilla chips on side (optional) DRESSING: 1/4 cup sour cream or yogurt, Juice of one lime, Salt and pepper
Directions
1. Mix up the dressing ingredients and taste test it. Adjust the salt, pepper as desired. 2. Mix the other ingredients in a large bowl. 3. Just before servine, pour the dressing over entire salad covering evenly. 4. Serve immediately with tortilla chips on side.
