Apple Broccoli Salad

15 minutes, 4 servings

Ingedients

SALAD: 1 large head of broccoli and 2 apples, DRESSING: 1 juiced lemon, 1 tablespoon olive oil, salt and pepper

Directions

1. Slice the stem of the broccoli into very thin discs–the thinner the better. 2. Cut each of the florets off and slice as thinly as possible. Set both aside in a bowl. 3. Halve and core the apples. 4. Slice the apples as thinly as possible and add them to the bowl of broccoli. 5. Mix dressing ingredients together in a small bowl. Salt and pepper to taste. 7. Pour dressing over sliced broccoli and apples and refrigerate for 10 minutes before serving.
