Garlic Black Bean Tacos

Ingedients

CABBAGE SLAW 4 cups cabbage (any color) 1/2 cup carrots, shredded 2/3 cup cilantro, chopped 2 scallions, chopped 1 clove garlic-minced, 1/2 teaspoon cumin, 1/2 teaspoon coriander, 1/4 cup lime juice, 2 teaspoons vegetable oil. BLACK BEANS 1 tablespoon vegetable oil 3 medium cloves garlic 1 28oz. can black beans 1/2 teaspoon red pepper flakes.

Directions

1. Put half of the lime juice and cabbage in a large bowl and mix until cabbage begins to soften. 2. Add carrot, cilantro and green onions. Mix. 3. In a separate bowl, mix minced garlic, spices, remaining lime juice and the oil then pour over vegetable mix. 4. Heat the garlic in oil briefly. When it begins to turn golden, add beans, 1/4 cup of water, salt and pepper flakes. As the beans heat up, mash them slightly. 5. Once heated through, assemble in desired shells, and cover with cabbage slaw. 6. Add cheese or taco sauce if desired.
