Omelet

Ingedients

4 eggs, 2 tablespoons finely chopped dill, chopped butter or margarine, 1 diced shallot or 1/2 diced red onion, 1/2 cup grated cheese, salt and pepper to taste

Directions

1. Crack eggs into a bowl. 2. Add salt, pepper and dill and whisk with a fork. 3. Place a large skillet over medium-high heat. Melt a small amount of butter or margarine in skillet. Once sizzling, add add onion and cook until soft–about 2 minutes. 4. Add the eggs to the hot pan and coat the surface evenly. After eggs start to stiffen, add cheese. 5. Cook until there is no translucent egg left, then fold the omelet in half with your spatula and lift out of the pan. 6. Enjoy!
