Carrot & Zucchini Stir Fry

Ingedients
3 tablespoons vegetable oil, 3 zucchini, shredded 2 peeled and shredded carrots, 2 cloves minced garlic, 2 tablespoons parsley, Salt and pepper to taste
Directions
1. In medium frying pan, heat oil over medium-high heat. 2. Add zucchini, carrots and garlic. Cook until vegetables are soft; about 7 minutes. 3. Stir in parsley, salt and pepper. 4. Serve and enjoy! 5. Refrigerate leftovers.
