Spicy Watermelon Relish

Ingedients
3 cups watermelon-cubed, 2 cucumbers-thinly sliced, 1/2 onion-chopped, 1 carrot-thinly sliced, 1/4 cup apple cider vinegar, 1 teaspoon red pepper flakes, 2 tablespoons cilantro-chopped (optional), Salt and pepper to taste
Directions
1. Combine all ingredients in a large bowl and toss gently. 2. Chill, serve and enjoy! 3. Can be added to sandwiches, grilled meat, tacos or eaten alone. 4. Refrigerate leftovers.
