Summer Skillet

Ingedients

2 teaspoons vegetable oil, 2 garlic cloves-minced, 3 small zucchini-sliced thick, 1 cup corn, 1 3/4 cups tomatoes-chopped, Black pepper to taste

Directions

1. In a large frying pan, heat oil over medium heat. 2. Add garlic, zucchini and corn. Cook for two minutes. 3. Add tomatoes and pepper. 4. Cover pan and simmer for 5 minutes until zucchini is soft. 5. Serve hot and enjoy!
