Asparagus Breakfast Bake

Ingedients

2 tablespoons olive oil, 1/2 cup chopped onion, 2 medium diced potatoes, 1/4 teaspoon salt, 1 lb asparagus, 6 eggs, 1 tablespoon milk, 1 cup shredded cheese.

Directions

1. Preheat oven to 350° F and grease a 13 X 9″ baking dish. 2. Heat oil in a large fring pan over medium heat. 3. Add onions and potatoes and cook until they begin to brown. 4. Trim bottom off asparagus and cut into 1 inch pieces. 5. Add asparagus to pan, add salt and pepper, and cook until asapragus is tender. 6. Transfer mix to baking dish. 7. Beat eggs and then add milk–mix together. Add mixture over the vegetables evenly. 8. Sprinkle cheddar cheese on top mixture. Bake for 20-25 minutes. 9. Serve and enjoy!
