Marinated Onions

Ingedients
2 large red onions-sliced, 2 (2oz) diced jalapeños(optional), 1/2 cup lime juice, 1 cup white vinegar, 1 tablespoon sugar, 2 teaspoons salt, 1 tablespoon chopped cilantro, chopped
Directions
1. Peel onions and thinly slice. 2. Fill a pot with water and bring to a boil. When water comes to a boil add sliced onions, let simmer for 2 minutes. 3. Drain hot water, remove onions, and add to ice bath. 4. Add lime juice, vinegar, sugar, salt, cilantro and jalapenos (if using) to a stainless steel mixing bowl. 5. After onions have cooled, drain from ice bath and add to other ingredients. Mix well to ensure even distribution. 6. Cover and place under refrigeration until cool. Will stay good in the refrigerator for 30 days.
