Cucumber Slaw

10 minutes, 4 servings

Ingedients

2 cucumbers, 2 carrots, 1/4 onion, 2 tablespoons white sugar, 1 1/2 teaspoons coriander, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 cup apple cider vinegar

Directions

1. Quarter cucumbers and slice into thin pieces. Shred carrots. Grate onion. 2. Combine cucumbers, carrots, onion, sugar, coriander, salt and pepper together in a bowl. 3. Add vinegar and mix well. 4. Chill in the refrigerator for an hour prior to use. 5. Enjoy on its own or use as a topping on sandwiches, burgers or tacos. 6. Refrigerate leftovers.
