Broccoli Soup

Ingedients
1-2 medium broccoli clusters, 1 tablespoon salt, 1 tablespoon black pepper, Parmesan cheese (optional), Walnuts (optional)
Directions
1. Bring water to a boil in a large stock pot. 2. Add a large pinch of salt, stir, add broccoli and allow to boil rapidly. 3. Cook broccoli until it can be pierced with fork. Remove the stock pot from burner. Do not pour out the water. 4. Using a slotted spoon, add broccoli to a blender. Pour enough water from the pot to fill the blender halfway. 5. Add a pinch of salt. 6. Use blender to puree the broccoli. 7. If using cheese, sprinkle a pinch in each bowl. 8. Pour soup into bowl and top with olive oil and walnuts (if using). 9. Serve immediately.
