Banana Pancakes

20 minutes, 1-3 servings

Ingedients

1 very ripe banana (peeled), 1 egg, 1/2 teaspoon cinnamon, 1 teaspoon butter or cooking spray

Directions

1. Mash banana in a bowl. 2. Whisk egg and beat well to combine. 3. Add cinnamon and stir. 4. Heat frying pan over medium heat. 5. Add butter (or spray) to pan and melt. 6. Pour batter onto frying pan; cook until golden brown on bottom; about 3 minutes. 7. Flip pancake and brown other side; about 2 minutes. 8. Serve with a little honey or syrup for extra sweetness.
NOTE: Batter will make 1 large pancake or 3 mini pancakes.
