Fried Zucchini with Parm
30 minutes, 4 to 6 servings
Ingedients
1 tablespoon olive oil, 2 medium zucchini-sliced in 1/4 inch disks, 1 teaspoon Italian seasoning, Salt and pepper to taste, 1/4 cup shredded parmesan cheese (or more to taste)
Directions
1. Heat oil in large skillet over medium-high heat. Wait a few minutes until oil is hot. 2. Lay zucchini in oil in an even layer. You may have to do 2 batches if not all the zucchini will fit. 3. Flip zucchini right away so each side of the zucchini has a bit of oil on them. 4. Sprinkle half the Italian seasoning, salt and pepper over zucchini as they fry 5. Cover and cook both sides for 4-6 minutes each or until slightly brown. 6. Sprinkle with rest of Italian seasoning. 7. In the last minute of cooking sprinkle parmesan cheese over zucchini and place lid back on for 15-30 seconds or until cheese has melted. 8. Serve warm and enjoy!
