Lentils & Rice with Fried Onions

Ingedients
1 large white or yellow onion, 6 tablespoons olive oil, 1 1/3 cups uncooked green lentils, 3/4 cup uncooked white rice, 1/4 cup plain yogurt, Any of these to taste: Curry powder, garlic powder, cayenne pepper, salt or pepper
Directions
1. Heat olive oil in a large skillet over medium heat.2. Slice onions into thin rings and place in oive oil. Stir until they are brown. Remove from heat and set aside. 3. Place lentils in medium saucepan with enough water to cover them. Bring to a boil, reduce heat and simmer for 15 minutes. 4. Stir in rice and enough water to cover the rice into the same pan. 5. Season with curry, garlic, cayenne, salt and pepper as desired. 6. Cover pan and continue to simmer 15-20 minutes, until rice and lentils are tender. 7. Mix half of onions into rice and lentil mixture. 8. Top with yogurt and remaining onions, then serve.
