Butternut Squash Sauté

30 minutes, 8 servings

Ingedients

1 butternut squash, 2 tablespoons vegetable or canola oil, 1 onion–chopped, Salt and pepper to taste

Directions

1. Cut squash in quarters. Scoop out the seeds. Peel and cut into small cubes. 2. In a large frying pan, add oil over medium heat. 3. Add onions and squash to the frying pan. Cover and cook until the squash is tender; about 20 minutes. 4. Add salt and pepper to taste. 5. Serve and enjoy!
